Caputo 00 Flour
The signature product, demanded by maestri pizzaioli the world over and recognized by the leading Neapolitan pizza certification associations. Regarded as the worlds best pizza flour. 100% natural without additives. 11 to 12% gluten gives a thin centre and a rim that balloons up.
San Marzano tomatoes
Italys most famous plum tomatoes, grown on the rich volcanic rock of Mount Vesuvius. This gives a sweet flavour and low acidity. Every tomato is hand picked due to the delicateness and have an official DOP. Denomazione d’origine protteta. (Protected designation of origin)
Made in Campania it also has a DOP. It’s made from Buffalo milk as opposed to cows milk (four di latte) which is rich in fats and proteins giving a creamier taste.
The King of Cheeses
Has a unique texture slightly sharp taste and layers of nutty fruity tones.
Fresh and dried herbs
It’s important for us to be seasonal so fresh herbs are one of our key ingredients. We also use dried herbs as they give their own authentic taste.
